A Tlayuda is a traditional pre-Hispanic dish that originated in the central valleys of
Oaxaca and, over time, spread to other regions. A huge corn tortilla, covered with
pork shoulder, bean paste, Oaxacan cheese, avocado, tomato, cabbage and onion.
